I adore the name Demetria and think it would work brilliantly on a little girl. I am a bit biased because the name Dimitri has been passed down in my family and Demetria is the feminine form. I'd definitely use it.
Ceres is a nice idea, but I'm not sure I like it. You could make it work if you wanted. It isn't too fanciful, just not the best sound in my view (assuming in is pronounces SEER-es or SEHR-es).
