My niece is Aimee Elisabeth. Both names are spelled the French way. Aimee, however, isn't wild about those spellings because many people (including her grandmother) can't seem to spell Aimee correctly. Aimee went through a phase where she spelled it Amy Elizabeth. My advice is to keep it simple.
On the plus side, Aimee and Caroline are French and are very complementary to one another.
I'm so sorry for your loss. Caroline is a beautiful name (my dd is Anna Caroline). Amy/Aimee Caroline is lovely.
