I wouldn't want to be named that.
It's not horrible, it's enough like familiar Stephanie to not seem too deliberately mythological - but it doesn't appeal to me. Has a tragic, passive aspect.
I think the spelling Persy looks awful.
If I had to nickname a Persephone, I'd try Seph or Sefne.

It seems like Stephanie, Penelope, Demetria but more dramatic. I've met a Persephone who was in her 20s, and it's ok/interesting, but I like other names better.
I'd just spell the NN as Percy. Or use the full name.

No guarantees that it won't get pronounced Percy + phone, which is a ghastly prospect. Persy sounds like Percy - balding male, false teeth, wheelchair - but looks like a spelling error. Best avoided.
Not too keen on Persy, particularly with that spelling. As someone else suggested Sephy is good. Or maybe even Perry?

I really like it. I'd probably go with Seph instead of Persy (or Persi to get farther away from Percy) but they both work.
I like it, for me it sounds fresh but unfortunately it means "to destroy" and "murder" 😀
