Elizabeth is overdone, so my pick is Evangeline - it has a lighter feel to it. Mary makes it too religious, Mae is nice but probably overused as a middle name, Maisie is cute but doesn’t fit here (I would prefer Pearl). Out of the three options you gave I would choose Evangeline Mae.
