Elissa is good both as a variant of Elisa, and the historical usage. Ellissa seems unbalanced.

For me it's Elissa > Elisa > Alissa >> Ellissa.

Elissa is nice, but Ellissa much less so, with all the double consonants, plus it looks like a feminine form of Ellis. I like Elissa it is very nicely feminine and I come across it very rarely so I'd think it's not highly used at all. But since there are so many different spellings plus similar-sounding names with different etymologies, the downside that I see is I think it could get confusing when used in real life.
I think I like Elisa a bit more though, can't say why but I do. Alissa is my least favourite out of these, I much prefer just Alice.

I've always had a soft spot for Elissa, another name for my beloved Dido. Ellissa just looks wrong.

I prefer it to Alissa (which I pronounce identically to Elissa) and to Elisa.

If I recall, it's only got one l in Carthaginian! And to me the i sounds like the vowel in fit, not feet. I like it, but I imagine most people would perceive it as a version of Eliza and pronounce it accordingly.

I don't find Alissa and Elisa (Eleesa) at all interesting; Elissa is.

I like Elissa. I could say it either to rhyme Melissa (more intuitive to me), or as 'el-LEE-sa' and it's nice either way. Better with one L just because two double consonants in one name never looks right to me. If it rhymed Melissa I would interpret it to be very similar to Alyssa. But I knew an Elissa who pronounced it el-LEE-sa and it never occurred to me that it was like Alyssa - it reminded me of Elisa instead.

Ellissa looks odd to me, like an attempt to feminize Ellis. I think I like Elisa best.

I like Elissa.
