Like it a lot, I’d consider using it.
I used to work at a bakery called Saffron.
It feels a little gimmicky...moreso than Rosemary would...similar to how Sage does to me. Maybe because the word's also commonly used to describe color?
It reminds me of Sophronia (sound) and Marigold (color, visual association - sunny), both of which I like.
The style also seems similar to: Poppy, Olive, Ginger. I have more of a lukewarm reaction to those.
It's not unappealing (I think I'd be okay with being named Saffron), but I can't see myself choosing it.

I like Saffron, but then I'm also fond of spice / nature names. The first image that springs to mind is Saffron (later Bridget, and then Yolanda) the con artist from Firefly.
I like it a lot for a girl, though I don't think I'd ever use it. I love the nickname "Savvy". I was actually a but surprised when I got a lot of positive comments about this name so I'll share the link with you:

I adore the name Saffron! I don't know if I am personally brave enough to use it, but it would be delightful to meet a little Saffron :)
It's okay. It's an expensive spice and in my opinion that is not exactly the greatest meaning. But it's okay for both genders.
