Lucy is great. It makes a lot of sense that it's shot up in popularity. It is slightly cutesy for my tastes, which is probably why I've never really considered it myself. I don't think I've ever met a Lucy, now that I think about it.
I watched The Lion, The Witch and The Wardrobe the other day, and I forgot how just natural the name sounds. They also called her "Lu" a lot which was wonderful, and much better than "Luce" IMO.
I love that you want to honor your mother-in-law, when so many tend to vilify that relation! I think Lucy on its own is the best option of the three. Lucinda is nice but I'd actually prefer that without a nickname. With Lucy, I'd keep it simple.
