I like Amandine, though I wouldn't use it where I live. I think it's a little too chock-full-of-almonds to work here.
Amanda is beautiful. I've always thought so, and its former mega popularity doesn't bother me, either. It really doesn't need a nickname, but Amy is not so out there that it won't work if you want it to.
Mandy is mostly avoidable if you introduce her as Amanda or Amy and correct anyone who tries to call her anything else. I don't think it would be a problem, honestly. The Amandas I've known have overwhelmingly been just "Amanda."
