I love Kitty, Kitsie, and Kay best of any, I think. Katrin, Katty, and Kix would be cute, too.
Actually, I really like Kix. I don't know why it appeals to me so much, but I really, really like it, heh. Maybe it's the influence of my favourite cereal.

ETA: I know a Catherine called Cassie, so I think Kassy could work for Katharine--as could Kizzie or Kiki.
