From your lists, I'd choose:
Olivia and Stella
Adrian and Gabriel
Stella and Adrian
Olivia and Julian
Olivia and Stella
Adrian and Gabriel
Stella and Adrian
Olivia and Julian
I like some of the names individually (Olivia, Stella, Nathan, Gabriel) but I don't think any of the twin sets sound quite right.
For example, I consider Scarlett, Ebony and Skye to all be quite modern, edgy names. I consider Ivy, Olivia and Stella to be more down-to-earth, old fashioned names. In my head, I think mixing the two together doesn't sound right. I think twins called Ebony & Skye go together, or Ivy & Stella.
I do like Adrian and Julian, but I'm not sure if they're a bit matchy to go together because they're both ending in -ian.
I also like Nate and Zane. Not necessarily names I like, but they suit each other without being matchy. I'm a little confused though - would his name be Nate, with Nathan as a nickname or the other way around?
Olivia and Gabriel go really well together for brother and sister.

I really like Scarlett and Ivy together. I'm not sure why, maybe it because they're both uncommon but not unusual, and are nature-y names. For the boys I like Adrian and Julian. The other combos don't go as well together for me. Ebony is way less popular than Olivia and Stella seems more romantic and old-fashioned (in a good way than Skye). Scarlett and Beau gives off a Gone With the Wind vibe, but Olivia and Gabriel is nice.
