Where I live, it's the name of a prominent girls' school and it's pronounced you-NEE-see. As you say, the meaning is wonderful (and very suitable for a girls' school with a long history) but it just doesn't seem human to me.

The meaning is good, but the sound is rather unappealing... I don't know when it's ever been common enough to be dated.
Emerald and Erika and such are lovely, so it's nothing against E names. I'm just not a fan of Eunice.

That's fine. Either spelling works for Erica / Erika. I like both ways... I like the way Erica looks and Erika is because of how it's transliterated from Jpns.
Esther, Eden and Elizabeth are also nice... and Elisa and Eliza (but not in same sibset obviously)... There are also some nice Jpns. E names out there, but I won't bother adding those unless requested... except maybe Erina since it's quite pretty and not far from Erin in sound.
