I like Tabitha. It has an elegant, dramatic feel, but it's not over the top by any means.
Tabitha Jane and Tabitha Rose both flow nicely. Rose is beautiful, but very overused as a middle name. Tabitha isn't overly popular, so it wouldn't be that problematic, though. Jane is also popular as a middle name, so she'd have a popular middle name either way, but I don't see Jane quite as often as Rose. If you'd like something a tad more interesting, go with Tabitha Jane.
