I love this name. I like all three spellings, but my favorite is probably Margo. Sometimes that spelling seems plain to me, but it's the most straightforward, and it's not a popular name to begin with, so I don't think it's too boring.
Here in the States in an area where most people are unfamiliar with French pronunciations, I'd be worried that Margot would be pronounced MAR-got or MAR-git, which I find unappealing, and I'm sure that Margaux would be butchered at least on occasion, too.
