It's a bit of a stretch for Persephone, but would make a cute pet name (as in affectionate way to call someone, not name for a pet).

Anything goes as a nickname, so Pixie is fine.

I think Pixie is fine on its own. As a NN for Persephone, I think it's too much of a stretch.
