I'll take the husband and shall name him Oliver Jasper Wilkinson "Ollie".
Ollie is 26 and is a freelance photographer, specialising in wildlife and nature. He has wavy dark brown hair, pale blue eyes and olive skin.

His wife is Annabeth Marie Wilkinson (née Peterson) "Anna". She is 25, and is in her second year as an elementary school teacher. She has long blonde hair, warm brown eyes, and pale skin.

How do you think they met? Perhaps Ollie was taking pictures at a local wildlife park or something and Anna and her students were there on a field trip?

Anyway, that sounds like a perfect idea to me. How about this:
Ollie had dreamed of being a photographer since he was a kid. He finally had a chance now, the beauty of the local wildlife park had always interested him, so he was trying to capture it in his photos. Anna had just secured a job in the city teaching a class of 6 and 7 year olds. The school had sent them on an educational field trip to the wildlife park, so the kids could learn about plants native to the area. The class stumbled across Ollie, who was pretty knowledgeable about the plants and flowers he was photographing. He explained (almost) everything he knew to the kids.
Something about Ollie captured Anna's interest, so she returned to the park herself a few days later, hoping to find him again. Much to her surprise, she did, and the two began talking. Several cups of coffee, a few movies, and numerous dinners later, Ollie dropped to one knee and proposed.
