Peter. It means "stone / rock" in Latin. It is a very traditional name here in the English-speaking West.
Why not Lee?
If you given name is Lei, I think Lee is the most obvious English name. Leo, Leon or Liam are other options.

If by Latin, you mean English, here are a few ideas...
Sterling or Stirling which means "little star"
Aster whish means "star".
Astin which also means "star".
or maybe Astrophel which means "lover of stars".
Also, I'm pretty sure Hesper means "star", but I'm not 100% sure.

Xing only is Chinese's one family name, does not have the significance in English, can with mine name Lei correlation,My name is Lei,In Chinese is the very many stones meaning.The analogy is candid.
