I definitely prefer Katharine/Katherine, the C spelling has always bugged me. It's probably because my mom's name is Kathleen and that's what I'm used to seeing so any Cath name feels wrong. I do hope to use Katharine some day, so I think it's a very lovely name. The most common spelling I've seen is Katherine and Kathryn though I only know a handful of girls with this name.
I really dislike Cathy/Kathy as a nickname. People assume my mom goes by Kathy and sometimes continue calling her by that name after she's told them she goes by Kat. So now the nickname in general just annoys me. It's fine for someone else, but I wouldn't use it.
Out of your combos I like Noah Olivia Catherine and Noah Catherine Olivia (I've thought about using Katharine Olivia myself).
