I love Teresa/Tessa, and also Tess and Tessie. I don't think they're too far-fetched as Teresa nicknames at all - in fact, I've known a few Teresas who went by Tess. I think Tessa is a gorgeous name, if a bit cutesy, but as you've got Teresa for her to fall back on as an adult then I don't see any problem with using it.
