Love Victoria... not so fond of Mary (or any other name that means bitter)... Most of the Marys I know are older...
It doesn't seem overdone at the moment to me.
If you insist on Victoria and never call her Vicki or Tori, others are more likely to follow your lead and get used to it. However, when she gets older, she may decide to go by a nn, but she might decide she likes Victoria better since it's such a pretty name.

Mary Victoria- I'd replace Mary with something else... Victoria May woud be ok.

Mary doesn't mean "bitter". "bitter" is just one of several things it might possibly mean. Most people think that it means "beloved" (it also says so on this site).I like Victoria May, thanks :)

It's believed to have maybe come from Mara, which means bitter, so it's one of the more likely possibilities, unfortunately.
