I like longer middle names with Zoe:
Zoe Caroline
Zoe Veronica
Zoe Catherine
Zoe Bernadette
Zoe Delphine - can't take credit for this - saw it on another name board.
Zoe Delilah
And, I can't really explain why, but I rather like Zoe paired with names from my generation, which I think makes it good for honoring:
Zoe Heather
Zoe Melissa
Zoe Michelle
Zoe Jennifer - yes I used Jennifer, but I really don't mind it as a middle name
