Joseph! No doubt about it. I think Joseph is a lovely, masculine name and timeless as well. I don't like any nn for Joseph and I'm glad to see that you are not planning on using any for the most part.
Joshua on the other hand is a name I've never liked the sound of. Just as you described it Joshua seems like a name for a little boy. I also have a terrible name memory from when I was young. My family and I were at a fair and there was this boy who yelled at his brother all the time. "Josh. Josh. Joshie, Joshie." Gah! Joshie! It was horrible.
