I love it, it's on my Personal Name List. I wouldn't use a nn, but if I were forced too I'd pick Centy or Vince over Vin or Vinny / Vinnie. I can also think of Vint and Vinty as nns, but I don't like them very much. I can't really think of any teasing nns for Vincent.
From your combos, I like:
Vincent Dominic
Vincent George
Vincent Arthur
Vincent David's also nice enough, but I don't like the flow as much as the three combos I picked above.
