Delor Carter , Settled in Upper state N.Y. around Redford and Cadyvill N.Y. My mom said she remembers him speaking french all the time but is not sure if it was Canadian or not .

Knowing that your great-grandfather was of possible French descent helps a lot. I'm going to draw upon my amazing psy-chick energies and take a shot at this by saying that your great-grandfather's name possibly came from the French phrase "de l'or", meaning "of the gold".
Alternately, "Delor" could be a diminutive of the surname "DeLorian" (as in John Z. DeLorian, the designer of the futuristic car which he named for himself and which was used in those *Back to the Future* movies). "DeLorian", I believe, means "descendant of Lorian" (i.e. "Laurence"), or even possibly "one who came from Lorraine, France".
